Vegan MoFo VI



Back from the weekend! And I have a recipe for you, that's really yummy and also very quick. During this season, napa cabbage is everywhere and until recently, I didn't know what to do with it besides putting it in salads - boring! But now I've discovered this delicious meal.


Quick Napa Cabbage Curry - Glutenfree (for two)
1 Onion,diced
2 garlic cloves, minced
1 tablespoon oil
1/2 Bell Pepper (mine was orange, but use whatever color you like),diced
1 carrot, sliced
300 Grams Napa Cabbage, cut into 2cm strips
1 tablespoon curry paste (from the Asian market - choose green, red or yellow!)
200 - 250ml  coconut milk
1/2 - 1 tablespoon soy sauce

Heat the oil in a pot on medium high heat. Add the onion, garlic, bell pepper and carrot and sauté for about 2 - 3 minutes, or until the onions are translucent. Add the curry paste and the cabbage, stir a little to incorporate the curry paste and sauté for a minute longer. Add the coconut milk, put the lid on the pot and let the curry simmer for about 5 to 10 minutes, until the cabbage has wilted a little, but is still crisp. Season with soy sauce. Serve over (brown) rice.




Zurück vom Wochenende! Und ich habe ein tolles, leckeres Rezept mitgebracht, das ganz schnell geht. Während dieser Jahreszeit quellen die Gemüseregale geradezu über vor Chinakohl, und bis vor kurzem wusste ich nichts damit anzufangen, als den Chinakohl in Salat zu schneiden - langweilig! Aber jetzt habe ich dieses fantastische Rezept kennengelernt:


Schnelles Chinakohl Curry - Glutenfrei (für zwei Personen)
1 Zwiebel, gewürfelt
2 Knoblauchzehen, gepresst
1 EL Öl
1/2 Paprika, gewürfelt (meiner war orange, aber jede andere Farbe ist auch ok!)
1 Karotte, in Scheiben
300 Gramm Chinakohl
1 EL Curry-Paste (aus dem Asia-Markt, rot, grün oder gelb!)
200 - 250ml Kokosnussmilch
1/2 - 1 EL Soja-Soße

Das Öl in einem Topf erhitzen. Zwiebel, Knoblauch, Paprika und Karotte dazugeben und dünsten, bis der Zwiebel glasig ist. Die Curry-Paste und den Chinakohl dazu, und rühren, bis die Paste halbwegs verteilt ist, und ca. 1min weiterdünsten. Mit Kokosnussmilch aufgießen, Deckel drauf, und 5 - 10 min köcheln lassen, bis der Chinakohl etwas zusammengefallen, aber noch knackig ist. Mit Soja-Soße abschmecken. Über (Natur-)Reis servieren.
